Joël Laval and his wife Christine took over the family vineyard in Aniane in the early 2000s, and wereted no time in making it more technically advanced. Today, Mas Laval extends over 30 hectares in the middle of the garrigue, where Thyme, Rosemary and Holm Oak provide a natural biodiversity. The vines, essential to the quality of future wines, are tended by hand, with as little mechanical work as possible: pruning, ploughing, natural fertilization, trellising, de-budding, appropriate treatment without excess, green harvesting, leaf removal and manual harvesting. In the winery, vinification is traditional and natural: little intervention during fermentation (apart from punching down), no addition of yeast, long maceration. The wine is generally aged in Burgundy barrels for between 8 and 18 months, depending on the wine, without filtration or fining.
